  1. PESTO CHICKEN  So far, without a doubt, absolutely undeniably, it is this. Never have a combination of flavours fit so well on my plate and made such versatile leftovers for the next day. Mmm, bellissimo!
  2. BEEF STEW I’m not sure if it’s the freezing cold evenings that make my family go crazy for this or whether it’s my addictive secret ingredient that draws them back in every time, but it sure as hell works for me.
  3. EGGS BENEDICT 4 eggs on one muffin! Is it possible I hear you cry? YES, anything is possible in Townsley’s kitchen. (note to self – try this with parma ham and rocket in summer)
  4. STRAWBERRY CUPCAKES One of the easiest cupcake recipes you’ll ever use, so adaptable and delicious, you will not find a better one, guaranteed. 
  5. AMERICAN PANCAKES  A saturday morning delight (for a self admitted culture vulture), don’t knock em till you’ve tried them.
  6. COFFEE CUPCAKES  After many attempts, I’ve finally found a recipe that actually produces sponge that tastes of espresso, one to try with a Bailey’s frosting?
  7. GOATS CHEESE AND RED ONION TARTS My ideal, (barely classed as home-made so maybe they should be downgraded) cold afternoon delight, but also brilliant in summer with salad.
